Making Betty Crocker Gluten Free Cookies with Coconut Cream From Tropical Traditions

This is my version of the Betty Crocker chocolate chip Gluten-Free cookie Mix.  The box calls for 1/2 cup of butter or oil.  I change this by using about half a stick of butter, and the other half from coconut oil.  I then also add in about 2 Tablespoons of Coconut Cream Concentrate.  You may have to play with the ratio a little bit to get the cookies just how you like them.  If your a little heavy on the oil / butter the cookies will spread out more and may grow together into one giant cookie.  If this happens, they still taste fine, and still get crispy once cool.

When you melt / soften the coconut oil / butter / coconut creme mix, make sure it isn’t too warm.  If it is, it will end up melting the chocolate chips and you will end up with chocolate cookies.  (which still taste fine).

Enjoy!  The Gluten Free Betty Crocker mixes are available nation wide in most grocery stores, including walmart.
