My initial impressions of the Smokin-It Electric Smoker, Model #3 — and the start of the burn-in process. I’m excited to get this thing going. It’s a solid, well-built stainless steel unit and getting it seasoned with an initial burn-in is the first order of business.

Update (October 2026) I stopped using SyncDocs a good many years ago.
